Hummus

I’ve been struggling with eating straight raw vegetables and I dearly miss having dairy and/or mayo dips to dip them in. Hummus is one the few dips I’m allowed to have that I love.

A peppy version of hummus that kicks like a mule. Lots of garlic and lemon, the way God intended it.

  1. Pour liquid off chickpeas. Rinse with cold water. Add to blender or food processor.
  2. Add remaining ingredients to blender. Blend until smooth.
  3. If hummus is too thick, add additional water one tablespoon at a time until it blends to the desired consistency.
  4. Scrape from blender into serving dish. Drizzle with a bit of extra olive oil if you like, sprinkle with paprika, and serve.

  1. hummus should be a staple in every household! i will have to try this one, for phase 1 i have made a version with using broth instead of oil the extra lemon and garlic would help it

    1. My approach to recipes is go bold or go home. I will have to try the broth version you suggest. Thinking chicken might work, too. I am just annoyed after finding out that mango and coconut can’t be consumed in the same phase. So SO wrong.
